Instructions
1. Bloom the Gelatin
Sprinkle the gelatin over cold water in a small bowl and let it sit for 5 minutes to soften.
2. Make the Creamy Base
In a medium saucepan, combine the heavy cream, coconut milk, sugar, and vanilla extract over medium heat. Stir gently until the sugar dissolves, ensuring the mixture doesn’t boil.
Remove the saucepan from the heat and stir in the bloomed gelatin until it fully dissolves.
Add the key lime juice and zest, whisking lightly to blend the flavors.
3. Set the Panna Cotta
Pour the mixture through a fine mesh sieve to ensure a smooth texture.
Divide evenly into ramekins, glasses, or serving dishes.
Refrigerate for 4-6 hours, or until fully set.
4. Garnish & Serve
Once firm, sprinkle toasted coconut flakes on top, add a little key lime zest, and finish with a dollop of whipped cream if desired.
