Preparation:
Prepare the gelatin:
Soak the gelatin leaves in cold water until soft (about 5 minutes).
Cream mixture:
In a large bowl, combine the heavy cream, sugar, and vanilla extract until the sugar is completely dissolved.
Dissolve the gelatin:
Squeeze the soft gelatin leaves well and melt them in a small saucepan over low heat. Stir continuously until the gelatin is completely melted (this only takes a few seconds).
Immediately add the melted gelatin to the cream mixture and mix well.
